Easiest Mugcake Recipe on Stove and Microwave

What do you do when you get cake cravings at midnight? I guess you don't bake a whole cake at 3 am in the morning if you don't have any cake lying around at home. Well, I have a solution for your midnight cake cravings which is very handy for you if you're just as lazy as me. I think you already know that I'm talking about mug cakes.



There are a thousand different recipes as well as flavors of mug cakes out there but I can assure none of those recipes will tell you how to do it on the stove if you don't have an oven. Mug cakes neither need a ton of ingredients nor too much time to bake. The first mug cake recipe that I'm going to share is coffee-flavored. Please keep an eye on my blog for more mug cake recipes with different flavors. So, without further ado, let's have a look at the recipe of my Coffee Flavoured Mugcake.

Cook Time: 10-15mins on stove/ 1.5-3mins in oven

Ingredient list:

1) Flour- 4 tablespoons
2) Sugar- 2 tablespoons
3) Instant Coffee Powder- 2 tablespoons
(if you're using sachets then 2 packets)
4) Liquid Milk- 3 tablespoons
(if you don't have liquid milk then mix 1 tablespoon milk powder with 3 tablespoons of water)
5) Soyabean oil/Sunflower oil/any kind of unflavored oil- 2 tablespoons
(several recipes will ask you to put 3 tablespoons of oil but that much oil is not required at all)
6) Baking powder- 1/8th teaspoon

Let's Cook Now :

Making the batter :


1) Take a heatproof ceramic mug. Put all the ingredients together in the mug.

2) Now with the help of a fork, stir and mix everything until well combined.


Baking in Microwave :

1) Bake the cake in your microwave at 180°c for 1.5mins-3mins. Take it out of the oven and voila! You got your instant mugcake withing 5 mins!

Baking on the stove :

1) Heat up a saucepan/casserole at medium-low heat on stove with a thin layer of salt spread on its bottom. Place a steel stand on the salt. Cover the pan with an airtight lid and keep it covered for 10 mins for preheating.

2) After your airtight pan is pre-heated, place the mug on the stand and cover the saucepan/casserole again. Make sure heat can't get out. It's better if you cover it with a glass lid so that you can check on the cake without opening the lid.

3) Bake the cake for 10-20 mins at medium-low heat. Keep checking the cake every 5 mins. The bake time may vary. Do not open the lid while baking, use a see-through lid instead.

Pro tips :


FOR STOVE
1) You can use sand instead of salt for spreading on the bottom of the pan or you can skip both and use nothing. Using salt or sand just creates extra heat inside the pan which makes baking on a stove much easier. It might take a bit longer than I said to bake the cake if you don't use anything.

2) Preheating is important if you are baking on the stove.

FOR OVEN
1)The time varies depending on the configuration of your microwave. I always bake for 3 mins in Miyako microwave oven at reheat mode. Preheating isn't needed.

2)You do not need to bake it in the convection mode. Bake it in the food reheating mode and the cake will come out just fine.
